This was the first meal I made in the new house; I thought it would be a great first recipe to include in The Knotty Eatery Guide. Not only is it easy- it’s a crowd pleaser. And I cook for a tough audience.
My critics include two children who peek into the kitchen and always ask the same question, “what’s that?” Along with their father who’s lived off of soda and candy for the last 32 years.
We hadn’t unpacked our cutlery or our dishes. We didn’t even own a dining table at this point.
The four of us ate on the floor, with styrofoam bowls and plastic spoons. It was a simple dish, in a vacant house but it is one of my favorite memories.
We were all hungry from moving that day, and this meal provided all the nourishment to keep moving late into the evening.
Humble Beginnings Frito Pot Pie is now a household favorite for everyone in the family. This a perfect one-pot ground turkey recipe when you’re in need of something delicious, satisfying, and easy for a weeknight dinner. Using ground turkey is a smart way to lighten up this hearty family pleaser. Add your choice of Fritos (Chili Cheese!) to add that wonderful crunch. Feel free to add other vegetable options to the tomatoes, chills, and pinto beans already tossed into the mix!
